Creamy Cucumber and Capsicum Salad

Capsicums – 2, deseeded, finely chopped
Cucumbers – 2, peeled, chopped
Onions – 2, minced
Garlic Paste – 1 to 2 tsp
Mint Leaves – 2 tsp, crushed
Ginger Powder – 1 tsp
Black Pepper Powder – 1 tsp
Plain Yogurt (or) Cream – 4 cups
Extra-Virgin Olive Oil as required
Salt as per taste

1. Heat olive oil in a pan over medium flame.
2. Saute the onions and capsicums for 15 to 20 minutes.
3. Remove and transfer to a big bowl.
4. Add all the other ingredients and mix well.
5. Keep it in the fridge for 2 hours.
6. Serve chilled.
