- 2 cups Vanilla Almond Milk
- 5 tbsp chia seeds
- 2 cups blueberries
1.Measure out 2 cups of sweetened vanilla soy milk, almond milk or other dairy or nondairy vanilla-flavored milk, shaken well before measuring.
2.Combine 5 tablespoons chia seeds with the milk and stir vigorously with a fork for one minute, breaking up any clumps that form with the back of the fork. Let sit for 15 minutes, then stir again until the chia seeds are well blended and separated.
3.Let the mixture sit at room temperature for 30 minutes, stirring halfway through to make sure the chia seeds remain well blended and separated. Stir one more time and refrigerate for 24 hours or until thickened and firm.
4. Mix 1/4 cup fresh blueberries into each 1/2-cup serving of chia pudding and serve.
