Banana Oat Bars

Ingredients

  • 1 ⅓ cups quick cooking oats
  • ½ cup white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ½ cup raisins
  • 1 cup mashed bananas
  • ¼ cup skim milk
  • 2 egg whites
  • 1 teaspoon vanilla extract

Directions

  • Step 1. Preheat oven to 350 degrees F (175 degrees C).
  • Step 2. Mix together dry ingredients. In a separate bowl mix together bananas, egg whites, milk and vanilla. Beat all together.
  • Step 3. Bake in a 9 x 13 inch pan which has been sprayed with non-stick spray for about 35 minutes. Cool and cut into bars. You may sprinkle with cinnamon and sugar, if desired.
