Zucchini-Tomato Saute – Diabetes Recipe

So easy to make and double or triple if needed. Serve as the main meal with a salad and crusty bread, or as a side dish

Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, sliced
  • 2 tomatoes, chopped
  • 2 pounds zucchini, peeled and cut into 1 inch thick slices
  • 1 green bell pepper, chopped
  • salt to taste
  • ground black pepper to taste
  • ¼ cup uncooked white rice
  • ½ cup water

  • Step 1. Heat oil in a saute pan over medium heat. Add onion, and cook and stir for 3 minutes. Add tomatoes, zucchini, and green pepper. Stir. Season to taste with salt and black pepper. Reduce heat, cover, and simmer for 5 minutes.
  • Step 2. Stir in rice and water. Cover, and cook over low heat for 20 minutes.
