Quinoa Phirni – Gluten Free

Quinoa Phirni is a unique rendition of the regular phirni or kheer recipe which is commonly cooked in North Indian households. Phirni is essentially a milk pudding that is made by boiling milk with sugar and either rice or any other grain. In this easy recipe of Quinoa Phirni, milk is boiled with roasted quinoa, saffron strands, dates, almonds powder and cardamom powder. This dessert recipe is not just extraordinary in taste but is also naturally rich in many essential nutrients. This makes it an excellent choice for special occasions and festivals when you want to indulge in healthy eating. 

Ingredients

  • 1 cup quinoa
  • 1/4 cup dried dates
  • 2 cup skimmed milk
  • 1/2 tablespoon ghee
  • 2 teaspoon slivered almonds
  • 6 pieces blueberry
  • 1 cup water
  • 1 teaspoon spice cardamom
  • 1 cup almonds
  • 1/4 teaspoon saffron
  • 2 pieces pistachios

How to make Quinoa Phirni

  • Step 1. Roast the quinoa. To make this sweet dish recipe, first, heat ghee in a pan. Add quinoa in the ghee and roast till it’s color changes to light brown. Once done, add water and bring the mix to boil.
  • Step 2. Add milk, saffron and let simmer. When the water reduces to half its volume, add hot milk with saffron strands. Reduce the flame and let the mix simmer for 7-8 minutes.
  • Step 3. Add almonds and cardamom. Finally, add in powdered almonds, cardamom powder and dates. Stir cook and mix well. Garnish with slivered pistachios and slivered almonds and serve hot or cold as preferred.
