Dryfruit Panjiri Recipe

Winters are here and so is the time to make some delicious Panjiri which is loaded with dry fruits. Panjiri not only keeps you warm during the chilly winter months but is also highly nutritious. With atta, ghee and several types of nuts and seeds, Panjiri is loaded with flavours. Make sure you prepare a big batch of Panjiri this season and include it in your everyday diet to keep yourself warm and cozy. You can prepare this palatable dish for several events and special occasions as well. Try out this easy recipe of dry fruit Panjiri in some few simple steps and get ready to be mesmerized.

Ingredients

  • 200 gm ghee
  • 3/4 cup sugar
  • 30 gm cashews
  • 1 tablespoon watermelon seeds
  • 1/2 teaspoon spice cardamom
  • 200 gm wheat flour
  • 1/2 cup almonds
  • 3/4 cup lotus seed
  • 1 tablespoon melon seeds
  • 11 tablespoon crushed pistachios

How to make Dryfruit Panjiri

  • Step 1. Roast almonds and cashews for a minute. For cooking this Panjiri recipe, take a flat-bottomed frying pan and start heating some ghee in it. Once the ghee is heated, add cashews and almonds to it. Roast them both for at least a minute and then transfer the roasted almond and cashews to a bowl and keep them aside.
Step 2 Shallow fry the lotus seeds for 5 minutes until crispy

Now, take the same pan and again add a tablespoon of ghee in it. Put in the lotus seeds and shallow fry them over a medium to light flame for a good 5 to 6 minutes until they turn crispy. After the lotus seeds are done frying, transfer them to the same bowl where sautéed dry fruits were kept (Step 1). Using a grinder jar, coarsely grind almonds, cashews and lotus seeds together.

Step 3. Roast the wheat flour and add all other ingredients to it.

Next, put a kadai and preheat 1 cup of ghee in it. Add wheat flour and roast it for 6 to 7 minutes or until you observe a golden coloured flour. To it, add crushed pistachio, cardamom powder, water melon seeds and melon seeds. Roast for another 5 minutes or so. Then add the mixture of ground almond, cashew and lotus seeds. While stirring frequently, roast the entire amalgamation for a good 6 to 7 minutes. Remove from heat and mix sugar to the result. Let the mixture cool down and your Panjiri is all set to be enjoyed.
