- ½ cup grated carrots (about 2 large carrots)
- ½ cup dates, pitted and chopped
- 1 cup raw cashews
- ¼ cup raisins
- 1 tsp. cinnamon
- ¼ tsp. nutmeg
- Desiccated coconut for rolling (optional)
- Wash and grate carrots. Place all ingredients into a food processor and pulse until smooth.
- Roll mixture into 16 evenly sized balls.
- Roll balls in desiccated coconut.
- Store in an airtight container.
