Anjeer Basundi Recipe

This festive season pamper your loved ones with a delicious yet yummy Anjeer Basundi, which you can make at home in just a few minutes. This traditional dish is similar to Rabri which is made by slow cooking the milk. What makes this dish so special is the addition of Anjeer, which gives this sweet treat a rich-creamy texture and delightful sweet taste. Garnish the dish with nuts and dry fruits and enjoy!

Ingredients

  • 2 litre milk
  • 1/4 cup almonds
  • 1/4 cup raisins
  • 1/2 teaspoon green cardamom
  • water as required
  • 1 cup dried figs
  • 1/4 cup cashews
  • 9 strand saffron
  • dash pistachios

How to make Anjeer Basundi

  • Step 1. Boil the milk. To make this quick Anjeer Basundi recipe, take a bowl and soak some dried fig (Anjeer) in some warm water. In the meantime, heat a vessel and add milk, keep stirring.
  • Step 2. Make a smooth Anjeer paste. Take the soaked Anjeer and make a smooth blend using a blender. Meanwhile, keep stirring the milk occasionally and allow it to turn thick.
  • Step 3. Anjeer Basundi is ready to relish. Once the milk is reduced to half, turn off the flame and add Anjeer paste along with saffron strands, Mix it nicely and turn off the flame. Keep stirring and add cardamom powder, dry fruits and nuts, simmer it for sometime. Garnish with pistachios and serve the way you like and enjoy !
